Rice Pudding

Ingredients

  • 4 eggs
  • 1 teaspoon vanilla
  • 1 litre milk
  • 3 tablespoons sugar
  • 5 tablespoons short-grain rice
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat the oven to 150ºC.
  2. Beat the eggs, vanilla, milk and sugar together. Pour into a baking dish and sprinkle in the rice.
  3. Sprinkle the nutmeg over the egg mixture.
  4. Bake for 1 1/2 – 2 hours in the preheated oven.
  5. Serve – with steamed or poached fruit as optional.
