A healthy and filling protein packed breakfast is just five minutes away with this frittata that’s cooked in a mug. Change up the ingredients to suit your mood or use whatever veggies are in the fridge. A real bonus is the clean-up is a breeze too!
Pinch of salt and pepper
1/2 cup baby spinach, chopped
2 tbsp grated Cheddar cheese
1 tbsp chopped spring onions
- Grease a large mug with non-stick cooking spray or oil; in the mug whisk together the eggs, salt and pepper. Stir in spinach, cheese and spring onions.
- Microwave on High for 30 seconds; stir mixture. Repeat twice until eggs are set and uniformly cooked. Let stand for 1 minute before serving.
TIP: Top with diced avocado and fresh salsa for a tasty garnish.
