Beef, Greens & Grains Meatballs

minutesThis is a very economical, yummy and satisfying family meal – and everyone loves meatballs!
Ingredients
1 can chopped tomatoes
2 tablespoons olive oil
250 g beef mince
110 g pouch ready-cooked rice & grains
Few handfuls baby spinach, chopped fine (can use a food processor)
1 teaspoon wholegrain mustard
1/2 teaspoon sea salt & black pepper
3 small eggs
1 cup fresh breadcrumbs
Cooked pasta to serve
Grated cheese for sprinkling
Directions
- In a small saucepan, simmer chopped tomatoes and olive oil while you assemble meatballs.
- In a large bowl mix together mince, rice/grains, spinach, mustard and seasoning. Add eggs and breadcrumbs and mix until well-combined. Hands are best for this. Roll into golf-ball sized balls and fry in a lightly oiled large pan until browned on all sides and cooked through.
- Cook your choice of pasta in plenty of well-salted water while meatballs cook. Scoop out half a cup of pasta water and set aside. Drain pasta well.
- Add tomato sauce and drained pasta to the pan with the cooked meatballs, toss and add some or all of the reserved pasta water to loosen it a bit.
- Serve from the pan topped with grated cheese.
