Cottage Cheese Pancakes

1 cup 1 (250g) cottage cheese
3 large 3 eggs
1/3 cup 1/3 milk
130 g 130 plain flour
2 tbsp 2 caster sugar
2 tsp 2 baking powder
¼ tsp of salt
1 tsp 1 vanilla paste
2 tbsp 2 coconut oil, melted and cooled
Butter or oil, for cooking
- To Serve** (optional)
Fresh fruit (e.g. berries, banana, stone fruit)
Maple syrup or honey
Directions
- In a medium bowl, whisk together the flour, baking powder, sugar and salt.
- In a blender, add the cottage cheese, milk and eggs. Blitz until smooth and creamy.
- Pour the blended mixture into the dry ingredients. Add the coconut oil and vanilla paste, then gently stir until just combined – the batter should be thick.
- Heat a non-stick frying pan over medium heat and lightly grease with butter or oil. Pour in ¼-cup portions of batter, cooking a few at a time. Cook for 2-3 minutes, until the edges look set and bubbles appear, then flip gently. Cook for a further 1–2 minutes until golden and cooked through.
- Stack the pancakes onto warm plates and top with fresh fruit and a drizzle of syrup.
