Stuffed Quesadillas

minutesA quesadilla is simply a heated tortilla with melted cheese inside. But in addition to cheese, you can put practically anything in a quesadilla.
Ingredients
Olive oil, for frying
1 medium 1 red onion, finely diced
1 1 red capsicum, finely diced
2 2 chorizo sausages (about 200g), finely chopped
8 8 eggs, lightly beaten
3/4 cup 3/4 grated cheese (cheddar or tasty)
4 large 4 flour tortillas
1 cup 1 refried beans
- To Serve:
1 large 1 avocado, mashed
1 1 lime, cut into wedges
coriander, chopped

Directions
- Heat a splash of olive oil in a large non-stick frying pan over medium heat. Add the onion, capsicum, and chorizo, and cook for 4–5 minutes, or until the onion is soft and the chorizo is golden.
- Divide the mixture into four portions (either visually in the pan or by transferring it to a bowl). For each quesadilla, return one portion to the pan, spread it out evenly, then pour over 2 beaten eggs and sprinkle with a little grated cheese.
- Spread ¼ cup of refried beans onto a tortilla and place it, bean-side down, on top of the egg mixture. Gently press it down into the eggs. Cook for a few minutes, until the egg is fully set and the quesadilla holds together well.
- Carefully flip the whole quesadilla so the tortilla is now on the bottom and the egg mixture is on top. Cook for another 1–2 minutes, until the base is golden and crisp.
- Fold in half and transfer to a board. Slice in half and serve with avocado and salsa on the side.
