Savoury Zucchini Slice

minutesThis slice makes an easy weeknight dinner – just add a green salad or some steamed veg on the side. It also keeps well in the fridge for up to 3 days. You can reheat in the oven or microwave, or just enjoy it cold and slice it up for packed lunches or picnics.
Ingredients
1 tbsp 1 olive oil
1 small 1 onion, finely diced
2 medium 2 zucchini, grated
1 cup 1 grated cheese (cheddar or tasty cheese)
¾ cup ricotta
200 g 200 chopped ham
8 8 eggs
1 tsp 1 garlic powder
1 tsp 1 dried oregano
1 cup 1 plain flour
1 tsp 1 baking powder
Salt & pepper, to taste
Directions
- Preheat oven to 180°C. Line a 20 x 30 cm slice tin with baking paper. Sauté the onion in olive oil over medium heat for 5–6 minutes until softened but not coloured. Set aside to cool slightly.
- Grate the zucchini and add to a large bowl, with the eggs, cheese, ricotta, ham, cooked onion, garlic powder, oregano and a good pinch of salt and pepper and mix well.
- Add the flour and baking powder, and mix until just combined. Then, pour the mixture into the prepared tin and smooth the top.
- Bake for 30–35 minutes or until golden and set in the centre. Cool slightly before slicing. Serve warm or at room temperature with a salad, or enjoy cold the next day.

Notes
- Try adding cooked bacon, shredded chicken, or leave it out entirely for a vegetarian version.
You can easily throw in some extras to taste, like chopped spinach, corn or sun-dried tomatoes for more flavour and texture.
