This slice makes an easy weeknight dinner – just add a green salad or some steamed veg on the side. It also keeps well in the fridge for up to 3 days. You can reheat in the oven or microwave, or just enjoy it cold and slice it up for packed lunches or picnics.

Ingredients

  • 1 tbsp 1 olive oil

  • 1 small 1 onion, finely diced

  • 2 medium 2 zucchini, grated

  • 1 cup 1 grated cheese (cheddar or tasty cheese)

  • ¾ cup ricotta

  • 200 g 200 chopped ham

  • 8 8 eggs

  • 1 tsp 1 garlic powder

  • 1 tsp 1 dried oregano

  • 1 cup 1 plain flour

  • 1 tsp 1 baking powder

  • Salt & pepper, to taste

Directions

  • Preheat oven to 180°C. Line a 20 x 30 cm slice tin with baking paper. Sauté the onion in olive oil over medium heat for 5–6 minutes until softened but not coloured. Set aside to cool slightly.
  • Grate the zucchini and add to a large bowl, with the eggs, cheese, ricotta, ham, cooked onion, garlic powder, oregano and a good pinch of salt and pepper and mix well.
  • Add the flour and baking powder, and mix until just combined. Then, pour the mixture into the prepared tin and smooth the top.
  • Bake for 30–35 minutes or until golden and set in the centre. Cool slightly before slicing. Serve warm or at room temperature with a salad, or enjoy cold the next day.

Notes

  • Try adding cooked bacon, shredded chicken, or leave it out entirely for a vegetarian version.
    You can easily throw in some extras to taste, like chopped spinach, corn or sun-dried tomatoes for more flavour and texture.
