Air Fryer Bacon & Egg Pie

Bake a classic Bacon & Egg Pie in an air fryer for extra convenience! And use Nici’s clever flip tip – for a great result every time!

Ingredients

  • 1 med onion, diced finely, cooked in air fryer for 5 mins

  • 2 sheets flaky pastry 

  • 200 g quality, streaky bacon

  • 5 eggs

  • small handful parsley, chopped roughly 

  • ½ tsp sea salt

  • 1/4 tsp cracked black pepper 

  • chutney – to serve

Directions

  • Preheat the air fryer to 185 C. Grease a 22cm tin.
  • Flour each sheet of pastry and roll out to a bit thinner. 
  • Add bacon and onions into the pie base.
  • Break in the eggs evenly distributed. Prick one yolk to allow for some spread. Season with salt and pepper. Use a small pastry brush dipped into eggs and brush pastry edges. Cover with second pastry sheet, pressing edges to seal. Trim excess pastry.
  • Brush the pie top with a milk/egg wash, make a few slits to allow air to escape during cooking.
    Bake in the air fryer for 20 minutes until golden brown on top.
    TIP: Remove, then flip the pie onto an oven proof plate or tray (I use a cake tin base) and return to the air fryer to cook the base, for a further 10 minutes will do it. 
  • Remove the pie, flip it back over, slice it and eat! It’s that easy… ENJOY!
