A taste of Asia with crispy slaw and tasty sesame air fried chicken. great for lunch or dinner any time of the week.

Ingredients

  • 2 tbsp soy sauce

  • 1 tbsp sesame oil

  • 1 tbsp rice vinegar

  • 2 tbsp runny honey

  • 1 tbsp garlic crushed

  • 3 cm fresh ginger grated

  • 600 g chicken thigh fillets (skinless) cut into bite-sized pieces

  • 2 eggs

  • ¼ cup cornflour

  • ¼ cup plain flour

  • 1 tbsp sesame seeds – lightly toasted in a dry frying pan

  • ¼ cup roasted salted peanuts (optional)

  • Coleslaw
  • ¼ cabbage shredded (red, green or a mix)

  • 1 carrot cut into sticks

  • 1 celery stalk sliced

  • 3 spring onions sliced

  • 2 tbsp rice vinegar

  • 1 tbsp sesame oil

  • 1 tsp runny honey

Directions

  • In a bowl, combine the soy sauce, sesame oil, rice vinegar, honey, garlic, and ginger. Add the chicken pieces and toss to coat. Let it marinate for at least 15 minutes.
  • In a shallow bowl whisk the eggs and in a separate shallow bowl mix the cornflour and flour.
  • Lift the chicken from the marinade and dip into the egg and then into the flour until well-coated.
  • Heat the air fryer to 180°C. Place the chicken pieces in the air fryer basket in a single layer. Cook for about 10-12 minutes or until the chicken is golden brown and cooked through, shaking the basket halfway through cooking.
  • Once cooked, sprinkle sesame seeds over the chicken.
  • While the chicken is cooking, in a large bowl, combine the cabbage, carrot, celery and spring onion.
  • To make the dressing, in a small bowl, whisk together the rice vinegar, sesame oil, honey and a sprinkle of salt and pepper.
  • Pour the dressing over the vegetables and toss to combine thoroughly.
  • Serve the crispy sesame chicken with the slaw and sprinkle with peanuts if using.
