Baked Cottage Cheese Eggs

minutesThese baked cottage cheese eggs are a quick, protein-packed breakfast or light lunch, made in individual ramekins. With creamy cottage cheese, fresh chives, and a hint of garlic, they’re easy to customise with your favourite mix-ins. Gluten-free, low-carb and ready in only 30 minutes.
Ingredients
4 large 4 eggs
1 cup 1 cottage cheese
1/2 cup 1/2 grated tasty cheese
2 tbsps 2 finely chopped chives
1/2 tsp 1/2 garlic powder
Salt and black pepper, to taste
Butter or oil, for greasing

Grated cheese, chilli flakes, extra chives
Directions
- Preheat the oven to 180°C (350°F). Generously grease two ramekins with butter or oil.
- In a mixing bowl, whisk together the eggs, cottage cheese, grated cheese, garlic powder, chives, a generous pinch of salt, and a few cracks of black pepper until well combined.
- Divide the mixture evenly between the ramekins. Place them on a baking tray to make transferring easier, then bake for 20–25 minutes, or until the eggs are set and the tops are beginning to turn golden.
- Top with extra chives, a pinch of chilli flakes, or a little more cheese if you like. Serve hot with toast or a crisp side salad.

- Try switching up the mix-ins to suit your taste and what you have to hand. Chopped baby spinach, roasted red peppers, crispy bacon, smoked salmon, sundried tomatoes, parmesan, or feta all make great additions
