This is a very economical, yummy and satisfying family meal – and everyone loves meatballs! 

Ingredients

  • 1 can chopped tomatoes

  • 2 tablespoons olive oil

  • 250 g beef mince

  • 110 g pouch ready-cooked rice & grains

  • Few handfuls baby spinach, chopped fine (can use a food processor)

  • 1 teaspoon wholegrain mustard

  • 1/2 teaspoon sea salt & black pepper

  • 3 small eggs

  • 1 cup fresh breadcrumbs

  • Cooked pasta to serve

  • Grated cheese for sprinkling

Directions

  • In a small saucepan, simmer chopped tomatoes and olive oil while you assemble meatballs.
  • In a large bowl mix together mince, rice/grains, spinach, mustard and seasoning. Add eggs and breadcrumbs and mix until well-combined. Hands are best for this. Roll into golf-ball sized balls and fry in a lightly oiled large pan until browned on all sides and cooked through.
  • Cook your choice of pasta in plenty of well-salted water while meatballs cook. Scoop out half a cup of pasta water and set aside. Drain pasta well.
  • Add tomato sauce and drained pasta to the pan with the cooked meatballs, toss and add some or all of the reserved pasta water to loosen it a bit.
  • Serve from the pan topped with grated cheese.
