Best Fried Rice

minutesWith just a few ingredients this rice is a real favourite for all ages.
Ingredients
2 tbsp 2 vegetable cooking oil, plus a little extra
3 3 spring onions, sliced
1 small 1 red capsicum, sliced
2 cups 2 frozen peas
1 cup 1 edamame beans, podded (optional)
4 cups 4 cooked rice (long grain works best)
1/4 tsp 1/4 sea salt
1/4 tsp 1/4 white pepper
2-3 tbsp 2-3 dark soy sauce + extra to serve
3 3 eggs, lightly beaten
1 1 red chilli, sliced – to serve
Directions
- Heat oil in a large pan or wok to medium heat. Fry spring onions (reserve some for garnishing) until crisped and golden in places. Add capsicum, frozen peas and the edamame beans and sauté until cooked. Add another splash of oil to the pan/wok and add the rice – keep it moving as it heats through to piping hot.
- Season well with salt and pepper and soy sauce. Divide onto serving plates or bowls.
- Wipe pan/wok clean, lower temperature and pour in beaten eggs. Cook until set and flip. When cooked, remove from pan and roll then slice. Place on top of rice.
- Serve the cooked rice with some soya sauce, spring onions and sliced chilli on the side.
