A super naturally delicious burger that’s easy to make. Taste the difference of homemade! This is a great recipe for one or two, and for families, students, flats etc.

Ingredients

  • 1 chicken breast

  • 1 egg

  • 1 cup breadcrumbs (Panko or toasted)

  • fresh ground black pepper

  • vegetable or Olive Oil Spray

  • 1 burger bun (plain, sesame, bap or brioche)

  • Lettuce leaves – washed

  • 1 Tomato, sliced

  • 1 tbsp reduced fat aioli or mayonnaise

Directions

  • Heat an oven grill to high. Put the chicken breast between 2 pieces of cling film and bash with a rolling pin or food mallet until about half the original thickness.
  • Spread the breadcrumbs on a plate. Beat the egg in a bowl and season with pepper. Dip the chicken into the egg, let the excess drip back into the bowl, then press into the breadcrumbs and cover both sides.
    Place the chicken on a flat baking tray, onto a sheet of baking paper and lightly spray with the oil. Cook under the grill for about 10 mins, turning once, until golden and crisp on both sides and the chicken is cooked through.
  • Split the bun and lightly toast in a toaster or under the grill.
  • To Serve
  • Place the cooked chicken on the toasted bottom bun and season with fresh ground black pepper to taste.
  • Add the lettuce and sliced tomato on top.
  • Spread some fresh mayo/aioli on the other top bun (optional). Place the bun on top of the burger to serve. Enjoy!

Tips

  • Push a toothpick through the top bun to hold the burger together better when serving for eating
  • You can substitute the chicken breast with thighs or tenders if you prefer.
  • Toasted breadcrumbs are a clever shortcut to getting golden crumbs – without frying.

  • You can also add a sauce or condiment to suit your taste eg; a tsp of pesto (as shown in image), sweet chilli sauce, bbq sauce etc.
