This carrot cake loaf is soft, moist, and full of warm spice, with crunchy walnuts and sweet grated carrot in every bite. It’s topped with a creamy caramelised white chocolate cream cheese frosting that takes it to the next level.
Perfect with a cup of tea, and just as good the next day (if there’s any left!).

Ingredients

  • For the loaf:
  • 3 large 3 eggs

  • 1 cup 1 neutral oil (e.g. canola or sunflower)

  • 1 1 ½ cups soft brown sugar, lightly packed

  • 1 tsp 1 vanilla paste

  • 1 1 ½ cups grated carrot (about 3 medium carrots)

  • 1 tsp 1 ground cinnamon

  • ½ tsp ground nutmeg

  • ½ tsp ground allspice

  • 2 cups 2 plain flour

  • ½ tsp baking soda

  • 1 1 ½ tsp baking powder

  • ½ tsp salt

  • â…“ cup roughly chopped walnuts, plus a small handful for decorating

  • For the frosting:
  • 100 g 100 caramelised white chocolate, chopped

  • 150 g 150 cream cheese, softened

  • 50 g 50 unsalted butter, softened

  • 1 cup 1 icing sugar, sifted

Directions

  • Preheat the oven to 185°C. Grease and line a loaf tin with baking paper. In a large bowl, whisk together the eggs, oil, brown sugar, and vanilla until smooth and slightly thickened.
  • In a separate bowl, combine the flour, baking soda, baking powder, salt, cinnamon, nutmeg and allspice. Add the dry ingredients to the wet ingredients and gently fold together until just combined.
  • Stir in the grated carrot and chopped nuts until evenly distributed.
  • Pour the batter into the prepared tin and smooth the top. Bake for 50–55 minutes, or until a skewer inserted into the centre comes out clean. Leave to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
  • While the loaf cools, melt the caramelised white chocolate in short bursts in the microwave, stirring between each burst. Set aside to cool slightly. In a medium bowl, beat the softened butter and icing sugar until light and fluffy. Add the cream cheese and cooled white chocolate, and beat until just combined and smooth.
  • Spread the frosting generously over the cooled loaf and finish with a sprinkle of chopped nuts.
