A decent club sandwich is so satisfying and pleasing to the eye. Don’t wait for the next cocktail party – make these little beauties at home to satisfy the club sammie craving!

Ingredients

  • For the Smashed Egg – Makes enough for 6 club sandwiches
  • 3 medium eggs, hard boiled (cooked for 7 mins) & peeled

  • 1 tablespoon mayonnaise

  • 1 tablespoon finely chopped chives (can use parsley or dill to suit)

  • 1/4 teaspoon sea salt

  • grind freshly ground black pepper

  • To Assemble
  • 3 fresh sandwich bread slices

Directions

  • In a bowl, smash the cooked eggs with a fork then mix in the remaining ingredients. Make it as smooth or as chunky as you like.

    Make a batch of smashed eggs and create your very own combinations eg;
    – Ham, mustard & smashed egg
    – Cold-smoked salmon & smashed egg
    – Smashed egg & tartare – Add some grated lemon rind, 1 tsp capers (rinsed and drained) and 1 small gherkin finely chopped and mix into the egg salad mix.
    – Smashed egg & lettuce – the all time classic favourite.

    Or try a little one-egg omelette and combine this with crispy streaky bacon and chilli jam for a wonderful breakfast club sandwich.
  • Spread the egg salad mix on to one slice of bread, place another piece of bread on top (middle layer) and add another ingredient, and place a slice of bread on top.
    Trim all the crusts off, and slice in to thirds, to club sized finger sandwiches – as per pic.

TIPS

  • For ease of peeling hard boiled eggs, start the eggs in salted warm water then bring to the boil. Drain and immerse in cold water once cooked, and then peel.
