Ingredients

  • 1 cup 1 (250g) cottage cheese

  • 3 large 3 eggs

  • 1/3 cup 1/3 milk

  • 130 g 130 plain flour

  • 2 tbsp 2 caster sugar

  • 2 tsp 2 baking powder

  • ¼ tsp of salt

  • 1 tsp 1 vanilla paste

  • 2 tbsp 2 coconut oil, melted and cooled

  • Butter or oil, for cooking

  • To Serve** (optional)
  • Fresh fruit (e.g. berries, banana, stone fruit)

  • Maple syrup or honey

Directions

  • In a medium bowl, whisk together the flour, baking powder, sugar and salt.
  • In a blender, add the cottage cheese, milk and eggs. Blitz until smooth and creamy.
  • Pour the blended mixture into the dry ingredients. Add the coconut oil and vanilla paste, then gently stir until just combined – the batter should be thick.
  • Heat a non-stick frying pan over medium heat and lightly grease with butter or oil. Pour in ¼-cup portions of batter, cooking a few at a time. Cook for 2-3 minutes, until the edges look set and bubbles appear, then flip gently. Cook for a further 1–2 minutes until golden and cooked through.
  • Stack the pancakes onto warm plates and top with fresh fruit and a drizzle of syrup.
