Cottage Cheesy Egg Bites

minutesThese fluffy, protein-packed cheesy bites are a quick and easy option for a healthy breakfast, lunch or snack. Blend the mixture for a silky-smooth texture, or just whisk everything together if you’re a fan of those cottage cheese curds. Either way, they’re simple to make – and perfect for any time!
Ingredients
9 medium 9 eggs (size 6)
1 cup 1 cottage cheese
2/3 cup 2/3 grated tasty cheese
4 4 spring onions, finely sliced
2 tbsp 2 chopped parsley
1/2 teaspoon 1/2 garlic powder
1/2 teaspoon 1/2 salt
1/4 teaspoon 1/4 black pepper
Directions
- Preheat oven to 170°C (350°F). Generously grease a 12-cup muffin tray to prevent sticking.
- In a food processor, blend the eggs, cottage cheese, tasty cheese, garlic powder, salt, and pepper until smooth. (If you prefer the texture of cottage cheese, you can whisk everything together in a bowl instead.)
- Transfer the mixture to a jug for easy pouring, then stir in the spring onions and parsley. Carefully pour the mixture into the prepared muffin cups, filling each just below the top.
- Bake for 20 minutes, or until the egg bites are just set in the middle and lightly golden on top.
- Let them cool slightly before removing them from the tray. Serve warm, or allow to cool completely and store in an airtight container in the fridge for up to 4 days.

Notes
- 1. To reheat, just microwave for 20–30 seconds until warmed through.
2. Swap the parsley for chives, or add wilted spinach for a variation.
3. A pinch of chilli flakes adds a nice subtle bit of heat!
