Makes 8 ramekin-sized bundles

Ingredients

  • 4 rashers bacon, diced

  • 1 medium onion, finely diced

  • 1 ½ cups grated cheese

  • 1 ½ cups grated zucchini

  • 1 small red capsicum, finely diced

  • 6 eggs

  • ½ cup chopped parsley

  • ½ tsp sea salt + 2 pinches black

Directions

  • Pre heat airfryer to 170ºC. Grease 8 ramekins with oil
  • Cook bacon and onion for 10 minutes in the airfryer
  • In a mixing bowl, combine cheese, zucchini and diced red capsicum. Add the cooked bacon and onion and mix well. Add 6 eggs, chopped parsley, salt and pepper. Mix all of the ingredients to combine well.
  • Spoon mixture into prepared ramekins, filling to just below the rim.
  • Bake for about 15 mins, or until set. Remove from airfryer, and repeat with remaining mixture and ramekins.
  • Allow to cool a bit then tip the bundles out onto a tray or plate.
  • Serve warm or cold with salad.

Notes

  • Tips: Can be frozen for up to 3 months, andsimply defrosted as required for lunch boxes or picnics.
  • Use ham or salmon in place of bacon – not need to cook these first.
  • Use peas in place of zucchini, roughly squishing them in your hands before adding them to the mix.
