Air Fryer Easy Cheesy Bundles

Ingredients
4 rashers bacon, diced
1 medium onion, finely diced
1 ½ cups grated cheese
1 ½ cups grated zucchini
1 small red capsicum, finely diced
6 eggs
½ cup chopped parsley
½ tsp sea salt + 2 pinches black
Directions
- Pre heat airfryer to 170ºC. Grease 8 ramekins with oil
- Cook bacon and onion for 10 minutes in the airfryer
- In a mixing bowl, combine cheese, zucchini and diced red capsicum. Add the cooked bacon and onion and mix well. Add 6 eggs, chopped parsley, salt and pepper. Mix all of the ingredients to combine well.
- Spoon mixture into prepared ramekins, filling to just below the rim.
- Bake for about 15 mins, or until set. Remove from airfryer, and repeat with remaining mixture and ramekins.
- Allow to cool a bit then tip the bundles out onto a tray or plate.
- Serve warm or cold with salad.

Notes
- Tips: Can be frozen for up to 3 months, andsimply defrosted as required for lunch boxes or picnics.
- Use ham or salmon in place of bacon – not need to cook these first.
- Use peas in place of zucchini, roughly squishing them in your hands before adding them to the mix.
