Easy Air Fryer Omelettes

Not only are there no prep dishes – you make the omelettes directly in the ramekin it cooks in – but each person can choose their own favourite mix-ins.
Ingredients
Cooking spray or oil
4 4 eggs
4 tbsp 4 cottage cheese
Salt and pepper, to taste

Fresh spinach, chopped
Fresh herbs
Mushrooms, chopped
Spring onions, sliced
Olives, chopped
Sun-dried tomatoes, chopped
Feta cheese, crumbled
Parmesan cheese, grated
Broccoli, cut into small florets
Tomatoes, diced
Capsicum, diced
Artichokes, chopped
Ham, chopped
Salami, chopped
Chorizo, sliced
Directions
- Prepare two 1-cup capacity oven-proof ramekins by generously spraying the bottom and sides with oil.
- Break two eggs into each ramekin, and add two tablespoons of cottage cheese to each one. Season with salt and pepper then mix well with a fork.
- Sprinkle over your chosen filling ingredients – use the list above for inspiration, or choose your own favourite flavours – until the ramekin is filled to 1.5cm below the top. Gently fold the fillings through the egg mixture.
- Carefully place the ramekins into the air fryer and bake at 180c for 10-12 minutes, or until the top is golden brown and the centre feels set when you press on it lightly.
- Remove from the air fryer and serve.
