Easy Air Fryer Omelettes

These tasty Air Fryer Omelettes make the perfect healthy, protein-packed breakfast or lunch!
Not only are there no prep dishes – you make the omelettes directly in the ramekin it cooks in – but each person can choose their own favourite mix-ins.

Ingredients

  • Cooking spray or oil

  • 4 4 eggs

  • 4 tbsp 4 cottage cheese

  • Salt and pepper, to taste

  • Fillings and Mix-in Ideas
  • Fresh spinach, chopped

  • Fresh herbs

  • Mushrooms, chopped

  • Spring onions, sliced

  • Olives, chopped

  • Sun-dried tomatoes, chopped

  • Feta cheese, crumbled

  • Parmesan cheese, grated

  • Broccoli, cut into small florets

  • Tomatoes, diced

  • Capsicum, diced

  • Artichokes, chopped

  • Ham, chopped

  • Salami, chopped

  • Chorizo, sliced

Directions

  • Prepare two 1-cup capacity oven-proof ramekins by generously spraying the bottom and sides with oil.
  • Break two eggs into each ramekin, and add two tablespoons of cottage cheese to each one. Season with salt and pepper then mix well with a fork.
  • Sprinkle over your chosen filling ingredients – use the list above for inspiration, or choose your own favourite flavours – until the ramekin is filled to 1.5cm below the top. Gently fold the fillings through the egg mixture.
  • Carefully place the ramekins into the air fryer and bake at 180c for 10-12 minutes, or until the top is golden brown and the centre feels set when you press on it lightly.
  • Remove from the air fryer and serve.
