Egg Roll Parcels

minutesThese are the best egg rolls, made with ham and fresh vegetables, tightly rolled up in a fresh, homemade egg roll – and no deep-frying needed!
Ingredients
5 large 5 eggs
1 small 1 carrot, finely grated
50 g 50 ham, finely chopped
2 2 spring onions, finely sliced
1 tbsp 1 chopped fresh chives
1 tbsp 1 water
1 tbsp 1 neutral oil
Salt and black pepper, to taste
Directions
- In a medium bowl, whisk the eggs until smooth. Stir in the carrot, ham, spring onions, chives, water, and a generous pinch of salt and pepper.
- Heat the oil in a medium non-stick frying pan over medium heat. Pour in about a quarter of the egg mixture, tilting the pan so it spreads into a thin, even layer.
- Cook gently until the surface is just set but still a little soft on top. Using a spatula, roll the omelette up from one side, like a scroll. Push the roll to the centre of the pan.
- Pour another portion of the egg mixture into the empty side of the pan, lifting the roll slightly so the uncooked egg flows underneath. Cook until just set, then roll the omelette again to enclose the new layer.
- Repeat the process, adding and rolling until all the egg mixture is used and you have a neat log.
- Transfer to a board and rest for a few minutes before slicing into bite-sized pieces. Serve warm or at room temperature

Notes
- Drizzle with soy sauce, sweet chilli, or sriracha mayo for extra flavour.
- Pack into lunchboxes – they’re a great make-ahead, protein-rich snack.
- Serve as a main course by pairing with steamed rice, salad, or seasonal vegetables.
