Nachos for breakfast? Why not! These Tex Mex inspired Loaded Nachos are a great way to start the day…

Ingredients

  • 170 g 170 salted corn chips

  • 100 g 100  black beans, drained and rinsed

  • 200 g 200 bacon, roughly chopped and fried until just cooked

  • 100 g 100 grated cheese (cheddar or your favourite melting cheese)

  • 1 cup 1 tomato salsa

  • 4 large 4 eggs

  • 1 tbsp 1 vegetable oil

  • 1 1 ripe avocado, diced

  • 1/2 1/2 red onion, finely diced

  • 3 tbsp 3 sour cream

  • 1 tbsp 1 sliced jalapeños

  • Small handful fresh coriander leaves

  • Lime wedges, to serve

Directions

  • Preheat oven to 190 °C. Spread corn chips evenly over a baking tray. Spoon over the salsa, then layer with black beans, precooked bacon and grated cheese. Bake for 10-12 minutes, until the cheese is melted and everything is heated through.
  • While the nachos bake, heat the oil in a frying pan over medium heat and fry the eggs to your preferred doneness.
  • Remove the tray from the oven and carefully top with the fried eggs. Scatter diced avocado, onion, jalapeño slices and fresh coriander over the nachos. Dollop the sour cream and serve immediately with lime wedges on the side.

Notes

  • Keep a close eye on the tray – cheese melts quickly and should be gooey, not browned.
  • Swap bacon for chorizo or pre-cooked sausage meat for a different flavour twist.
