This is a trusted recipe from Nan’s recipe book – always moist and banana-y it’s a perfect loaf for an afternoon treat – or a yummy lunchbox surprise.

Ingredients

  • 4 4 eggs

  • 2/3 cup 2/3 vegetable oil

  • 1 1/2 1 1/2 cups caster sugar

  • 1/2 cup 1/2 Greek yoghurt

  • 1 cup 1 banana, mashed (2-3 medium bananas)

  • 2 cups 2 plain flour

  • 1 tsp 1 baking powder

  • 1 1/2 tsp 1 1/2 baking soda

  • 1 tsp 1 salt

Directions

  • Preheat the oven to 170°C. Line a 23 × 13 cm loaf tin with baking paper.
  • In a large bowl, whisk together the mashed banana, oil, sugar, yoghurt and eggs until smooth and well combined.
  • In a separate bowl, sift together the flour, baking powder, baking soda and salt. Add the dry ingredients to the banana mixture and fold gently until just combined – take care not to over-mix to keep the loaf light and tender.
  • Pour the batter into the prepared tin and smooth the top. Bake for 55-65 minutes, or until a skewer inserted into the centre comes out clean. If the top is browning too quickly, loosely cover with foil (piercing a few small holes to let steam escape) and continue baking.
  • Once baked, remove the loaf from the oven and let it cool in the tin for 10 minutes. Transfer to a wire rack and leave to cool completely before slicing.
  • TASTY OPTIONS
  • Add 1 cup of chocolate chunks, or ¾ cup of chopped nuts, or swirl through 2 tbsp sugar mixed with 1 tsp cinnamon before baking for tasty twists.
