One Pan Shakshuka Gnocchi

This is the kind of dinner that earns a permanent spot in the weeknight rotation. One pan, 40 minutes, and eggs doing what they do best. A great value, high-protein addition that works just as well at dinner as it does at breakfast. Rich spiced tomato sauce, soft gnocchi, and runny yolks that spill through the whole dish when you dig in.

1 1 onion, diced
1 1 capsicum, diced
2 cloves 2 garlic, finely chopped
1 tsp 1 smoked paprika
1 tsp 1 ground cumin
1/2 tsp 1/2 chilli flakes (optional)
2 2 400g tins crushed tomatoes
1/2 cup 1/2 water
500 g 500 gnocchi
4-6 4-6 eggs
70 g 70 feta, crumbled
Fresh herbs such as parsley, basil, coriander or dill, to garnish (optional)
Crusty bread, to serve (optional)
Directions
- Preheat your oven to 200°C.
- Heat a large oven-safe pan or skillet over medium heat with a drizzle of oil. Cook the onion and capsicum for 4-5 minutes until softened. Add the garlic, smoked paprika, cumin and chilli flakes and cook for another minute until fragrant.
- Pour in the crushed tomatoes and season generously with salt and pepper. Simmer for 15 minutes, stirring occasionally, until the sauce has thickened and deepened in colour. Add the water and mix through.
- Stir the gnocchi through the sauce and cook for 2 minutes.
- Use a spoon to make 4-6 wells in the sauce. Crack an egg into each well, crumble the feta over the top and season with salt and pepper.
- Transfer to the oven and bake for 8-12 minutes until the egg whites are set and the yolks are still runny. Scatter over fresh herbs if using and serve straight from the pan with crusty bread if you wish.
