Pepperoni Pizza Toast with Fried Eggs

Ingredients
4 slices 4 sourdough bread
1/2 cup 1/2 pizza sauce
1 1/2 cups 1 1/2 grated cheese
100 g 100 pepperoni salami, thinly sliced
4 4 eggs
1 tbsp 1 olive oil
1/2 tsp 1/2 chilli flakes (optional)
pinch pinch Salt and freshly ground black pepper
Basil pesto, to drizzle
Directions
- Preheat the oven to 200°c and line a baking tray with baking paper. Place the sourdough slices on the tray. Spread each slice evenly with pizza sauce, then top with grated cheese and pepperoni slices.
- Bake for 8-10 minutes, or until the cheese is melted, bubbling, and the edges of the bread are golden and crisp.
- While the toasts are baking, heat the olive oil in a frying pan over medium heat. Crack in the eggs and cook to your liking. Season with chilli flakes, salt and pepper.
- Remove the pizza toasts from the oven and top each with a fried egg. Drizzle with pesto and serve immediately.
Notes
- Thick-cut white, ciabatta, or Turkish bread works well if sourdough isn’t available.
