Sausage, Potato & Cheese Tray Bake

minutesCrunchy, gooey, oozy  – this traybake has it all going on. Perfect for a fast weeknight meal.
Ingredients
450 g oven fries (Nici uses Watties Super Oven Fries as they are NZ grown potatoes)
4-6 thin sausages
1 cup grated cheese
3-4 eggs
fresh spinach leaves – to serveÂ
Salt, black pepper and chilli flakes to season
Directions
- Preheat oven to 230 C. Line a tray with baking paper (saves on washing up!).
- Scatter oven fries in a single layer on prepared tray and lay sausages on top. Bake for 20 minutes or until fries are golden and sausages cooked.
- Lower oven temperature to 180 C. Sprinkle over grated cheese then makes some space in the fries to gently break eggs into. Bake for a further 5-10Â Â minutes or until cheese is melting and bubbling and eggs are cooked to your liking.
- Season with salt, pepper and chilli flakes and serve with a few handfuls of spinach leaves.
Notes
- TIP: You can replace the sausages with bacon rashers or hot smoked salmon, adding them at the same time as cheese and eggs.Â
