Creamy Cottage Cheese Scrambled Eggs

Ingredients
3 medium 3 eggs
¼ cup ¼ (60g) cottage cheese
1 tbsp 1 butter
1 tbsp 1 milk
Salt and pepper, to taste
1 tbsp 1 fresh chives, chopped
Directions
- In a bowl, whisk the eggs, milk and a pinch of salt and pepper until just combined. Melt the butter in a frying pan over a low to medium heat.
- Pour the egg mixture into the pan and let it sit for 20–30 seconds without stirring. Then, using a spatula, gently push the eggs from the edges toward the centre, letting the uncooked egg flow into the empty spaces.
- Continue to fold the eggs slowly, cooking until they are nearly set. Take the pan off the heat and dollop the cottage cheese onto the eggs, and then gently fold through (the heat from the eggs will melt the cheese, and give a creamy texture).
- Sprinkle the eggs with chives and serve warm on buttered toast.
