Cottage Cheese, Tomato & Basil Omelette

minutesCottage Cheese is a versatile, protein-packed, low-cal cheese that can be added to scrambled eggs, quiches, omelettes, muffins etc. Its mild flavour makes it the perfect ingredient for a low-calorie, natural protein boost in just about every recipe!
Ingredients
3 large 3 eggs
¼ cup ¼ cottage cheese
100 g 100 mixed cherry tomatoes, halved
3-4 3-4 fresh basil leaves, chopped
1 tbsp 1 butter or olive oil
Salt & black pepper – to taste
Directions
- Whisk the eggs in a bowl with a pinch of salt and pepper until fully combined. Heat a pan over medium heat, then add the butter (or olive oil), swirling to coat the surface.
- Pour the eggs into the pan, tilting slightly to spread them evenly. Let them cook undisturbed for about 30 seconds until the edges start to set. Using a spatula, gently push the set edges toward the centre, allowing the uncooked egg to flow outward and fill the gaps.
- Once the omelette is nearly set but still slightly soft on top, spoon the cottage cheese onto one half and spread it out. Scatter the cherry tomatoes and fresh basil on top. Carefully fold the other half over the filling with a spatula and let it cook for another 20-30 seconds to warm through.
- Serve immediately, garnished with extra basil if desired.
