Ingredients

  • 5 eggs

  • 1 onion, sliced thinly

  • 1 cup par-cooked, sliced potatoes

  • 3 tablespoons olive oil

  • 2 tablespoons chopped rosemary

  • ½ tsp sea salt + ¼ tsp black pepper

Directions

  • Preheat airfryer to 180 C. Line a suitable dish with baking paper.
  • Add onions and potatoes to airfryer basket, drizzle in one tablespoon of the olive oil. Bake for 15 minutes or until onions and potato are softened.
  • In a large bowl, whisk together eggs, rosemary, seasoning and remaining olive oil.
  • Tumble in potatoes and onions and stir to coat. Pour into prepared dish.
  • Reduce temperture to 170 C and bake for  15-20 minutes or until set.
  • Remove from dish, slice and eat!

Notes

  • Tip: Try other vegetables like pumpkin, kumara, broccoli, beans, corn or peas in this recipe in place of potato.
