Air Fryer Potato & Rosemary Frittata

5 eggs
1 onion, sliced thinly
1 cup par-cooked, sliced potatoes
3 tablespoons olive oil
2 tablespoons chopped rosemary
½ tsp sea salt + ¼ tsp black pepper
Directions
- Preheat airfryer to 180 C. Line a suitable dish with baking paper.
- Add onions and potatoes to airfryer basket, drizzle in one tablespoon of the olive oil. Bake for 15 minutes or until onions and potato are softened.
- In a large bowl, whisk together eggs, rosemary, seasoning and remaining olive oil.
- Tumble in potatoes and onions and stir to coat. Pour into prepared dish.
- Reduce temperture to 170 C and bake for 15-20 minutes or until set.
- Remove from dish, slice and eat!

- Tip: Try other vegetables like pumpkin, kumara, broccoli, beans, corn or peas in this recipe in place of potato.
