Beans, Cheese and Fried Egg Tostadas

Mexican-style tostadas are simple, quick and easy to make, and are a popular brunch, lunch or simple dinner for all ages.

Ingredients

  • 4 small 4 flour tortillas

  • 2-3 2-3 tbsp olive oil

  • 1 cup 1 refried black beans

  • 1/2 cup 1/2 grated cheese (cheddar, colby, or similar)

  • 4 4 eggs

  • 1/2 1/2 ripe avocado, sliced

  • 1/3 cup 1/3 tomato salsa

  • 1/2 1/2 red onion, thinly sliced

  • 2 tbsp 2 white vinegar

  • 2 tsp 2 caster sugar

  • 1 1 fresh green chilli, thinly sliced

  • Fresh coriander, chopped

  • Salt, black pepper, and chilli flakes

  • Lime wedges, to serve

Directions

  • In a small bowl, combine the onion, vinegar, sugar and a pinch of salt. Toss well and set aside for at least 10 minutes to lightly pickle while you prepare the tostadas.
  • Preheat the oven to 200°C. Brush both sides of the tortillas with olive oil and arrange on a baking tray. Bake for about 5 minutes, turning once, until crisp and lightly golden.
  • Spread each crisp tortilla with refried black beans and sprinkle with cheese. Return to the oven for 3-4 minutes, until the cheese is melted and bubbling.
  • While the tostadas bake, heat a little oil in a frying pan over medium heat. Crack in the eggs and fry until the whites are set and the yolks are still runny (or to your liking). Season with salt, pepper, and a pinch of chilli flakes.
  • Top each bean-and-cheese tostada with a fried egg. Add an avocado slice, a spoonful of salsa, pickled onion and a little fresh green chilli. Scatter with coriander. Arrange on a platter or individual plates and serve right away with lime wedges for squeezing.

Notes

  • If you have leftovers on hand, try stirring shredded roast chicken, pulled pork, or cooked chorizo into the refried beans before spreading them on the tortillas.
