Crispy Fried Rice Omelette

3 3 eggs
1 tbsp 1 neutral cooking oil eg; canola, sunflower etc
1 cup 1 cooked rice
1/2 cup 1/2 mixed vegetables (peas, corn, diced carrot, diced capsicum, or whatever you have on hand)
2 tsp 2 soy sauce
1 tsp 1 sesame oil
- To Serve** (optional)
Spring onion or chives, Kewpie mayonnaise and/or your favourite hot sauce
Directions
- Beat the eggs in a small bowl, season with salt and pepper and set aside.
- Heat a non-stick frying pan or skillet over high heat and add the neutral oil.
- Add the rice and spread it out in the pan. Leave it undisturbed for a minute at a time, then stir and repeat, until it starts to brown and crisp in spots.
- Add the mixed vegetables and cook for 1-2 minutes, stirring through the rice until just softened.
- Mix in the soy sauce and sesame oil, then spread into an even layer in the pan.
- Reduce the heat to medium and pour the beaten eggs over the rice. Swirl the pan so the egg coats the rice evenly. Cook for 2-3 minutes, until mostly set through.
- Use a spatula to gently fold the omelette in half and transfer it to a plate.
- Top with optional spring onion, Kewpie mayonnaise or hot sauce if you wish.

- A neutral cooking oil has little to no flavour, allowing the natural tastes of your ingredients to shine through. Because of their mild taste and high smoke points, these oils are ideal for searing, frying, sautéing, and baking.
