Bagel Egg In A Hole

Bagels, but better. The egg is the hero here, cracked right into the hole with ham and a little melted cheese. The trick is the grated cheese on the tray that bakes into a crispy base underneath. One pan, no fuss.
You can’t beat eggs for breakfast!

Ingredients

  • 3 3 bagels, halved

  • 1 1/2 1 1/2 cups grated cheese

  • 6 slices 6 ham

  • 6 6 eggs

  • 1 tbsp 1 chopped chives (optional)

Directions

  • Preheat your oven to 200°C and line a baking tray with baking paper.
  • Use a small knife to cut a wider hole in the bagel to fit the ham and egg, about 4cm wide.
  • Sprinkle 6 small piles of grated cheese directly onto the lined tray where each bagel will sit, reserving some of the cheese to sprinkle on top. Open the bagels and place each half, cut size down, on top of the cheese piles.
  • Place the ham over the holes in the bagels, tucking each piece into the hole to create a bowl for the eggs to sit in.
  • Crack an egg into each hole and season with salt and pepper.
  • Sprinkle the remaining grated cheese over the top.
  • Bake for 10–15 minutes, until the egg whites are set and the yolks are still runny, or cooked to your liking.
  • Sprinkle with chopped chives if using and serve warm.
