Easy Carbonara

Spaghetti or other pasta. (Approx 50gm of dried pasta per person is a general guide)
6 eggs
4 egg yolks
1 cup freshly grated parmesan
1 tsp salt (for the pasta water)
4 rashers of rindless bacon, sliced into bite size pieces
Freshly ground black pepper
Directions
- Cook pasta in plenty of hot boiling salted water in a large pot.
- While pasta cooks, combine all the eggs in a bowl
- Cook the bacon in a deep frypan.
- When pasta is cooked, drain, and then return it to the pan with the cooked bacon.
- Remove from the heat.
- Pour the egg mixture over the pasta in the pan, and gently stir to combine well and coat the pasta.
- Add a generous grind of fresh black pepper.
- Leave to stand for 1 min.
- Serve with a generous sprinkle of grated parmesan on top.
Notes
- Optional: You can adapt this recipe with garlic, peas and onion to create your own favourite Carbonara flavours.
- The additional egg yolks in this recipe ensures the sauce is not too dry when coating the pasta.
