Migas – Scrambled Egg & Crunchy Tortillas

minutesA classic Mexican style breakfast. Soft scrambled eggs and smokey sausage with crunchy toasted tortilla.
Ingredients
8 size 7 eggs
2 medium size flour or corn tortillas toasted (you can substitute pita bread or similar)
1 Chorizo sausage cut into small pieces (you can substitute any spicy sausage or salami)
1 courgette finely sliced
1 small onion finely chopped
1 small red capsicum finely diced
1 chilli finely chopped (optional)
1 teaspoon smoked paprika
salt & pepper to taste
Directions
- Fry the courgette, onion, chorizo and capsicum until cooked. Meanwhile mix the eggs in a bowl and season with salt and pepper. Pour the egg mixture into the pan with chorizo and vegetables and cook over a medium low/heat stirring constantly. When the egg is set but still moist remove the pan from heat. Share the migas between 4 plates and top with the toasted tortilla and a sprinkling of smoked paprika – Ay Carumba!
Notes
- Use any other vegetables you fancy
- Add mushrooms instead of sausage for a vegetarian option
