A classic Mexican style breakfast. Soft scrambled eggs and smokey sausage with crunchy toasted tortilla.

Ingredients

  • 8 size 7 eggs

  • 2 medium size flour or corn tortillas toasted (you can substitute pita bread or similar)

  • 1 Chorizo sausage cut into small pieces (you can substitute any spicy sausage or salami)

  • 1 courgette finely sliced

  • 1 small onion finely chopped

  • 1 small red capsicum finely diced

  • 1 chilli finely chopped (optional)

  • 1 teaspoon smoked paprika

  • salt & pepper to taste

Directions

  • Fry the courgette, onion, chorizo and capsicum until cooked. Meanwhile mix the eggs in a bowl and season with salt and pepper. Pour the egg mixture into the pan with chorizo and vegetables and cook over a medium low/heat stirring constantly. When the egg is set but still moist remove the pan from heat. Share the migas between 4 plates and top with the toasted tortilla and a sprinkling of smoked paprika – Ay Carumba!

Notes

  • Use any other vegetables you fancy
  • Add mushrooms instead of sausage for a vegetarian option
