SPICY BEANS WITH SOFT EGGS

minutesHearty and delicious, these spiced beans with eggs makes for a super-fast dinner or an easy lazy lunch idea.Â
Ingredients
2 tablespoons olive oil
1 red capsicum, sliced thinly
1/2 can crushed tomatoes (or use 2-3 chopped tomatoes when in season)
1 can chilli beans
1/4 teaspoon sea salt & grind of black pepper
1-2 eggs per person
Store-bought pesto to serve
Buttered toast to serve
Directions
- This can be made in one large pan or individual smaller pans, one for each person if cooking for two.
Fry capsicum in oil until softened. Add tomatoes and let it bubble away happily for 5 minutes. Add beans, salt and pepper and cook for 5-10 minutes until thickened slightly. - Make a little hollow in the mixture and carefully break egg(s) into it. Cook gently until whites are set or until cooked to your liking.
- Serve spoonfuls of beans with an egg and topped with pesto, with buttered toast.
Notes
- TIP: Make your own spiced beans by using a c an of plain mixed beans with ½ teaspoon each of cumin, coriander and chilli powder.Â
