minutesThis Tortilla Quiche recipe idea is so quick and easy to make, and doesn’t even require you to use any prep dishes – you make this quiche in the dish you cook it in! Too easy! Slices of tortilla quiche are a great healthy addition to lunch boxes too.
Ingredients
1 large flour tortilla
4 eggs
1 cup cottage cheese
1 red capsicum, diced
1 large handful of spinach leaves, rinsed
½ cup grated tasty cheese
Salt and pepper
Directions
- Heat oven to 190c. Gently press the tortilla into an ovenproof quiche dish, so that it folds up the sides to hold the filling. Break 4 eggs into the tortilla and add the cottage cheese. Use a fork to beat the eggs, being carefully not to cut the tortilla with the fork
- Evenly sprinkle over the capsicum, spinach leaves and grated cheese. Season generously with salt and pepper and bake for 30 minutes, or until the filling has just set.
- Remove from the oven and slide the quiche out of the dish onto a chopping board. Cut into quarters and serve while still warm.
