Pavlova

Pavlovas are a staple for many kiwi festive celebrations, long weekends and holiday gatherings. Everyone loves that big crispy white meringue with soft marshmallowy centre topped with lashings of fruit and cream. You can also make baby pavs, rolled pavs or just a batch of small meringues – and an Eton Mess is a great way to use up imperfect attempts!

For best success use the freshest eggs, make sure bowls and beaters are clean and avoid humid days when baking.
