Egg yolks sauce the steamed asparagus with a little lemon juice, salt and pepper.
So very simple, natural and yummy.
- Small bunch of asparagus
- 2 eggs
- 1 squeeze of lemon juice
- Freshly ground pepper
- A little salt
- Steam the asparagus spears. Drain and put plate. Top with butter or olive oil.

- Pop the eggs on top of the asparagus, grind a little pepper and slat on top, add a generous squeeze of lemon.
- The eggs and asparagus should be cooked at the same time.
