Asian Crepes

minutesTreat everyone to a popular street food from northern China made with crispy wonton wrappers. A great idea for a snack, an easy lunch or a simple but nutritious dinner. Wonton wrappers are readily available in supermarkets or specialty food stores.
Ingredients
8 wonton wrappers
0.75 cup milk
0.5 cup all-purpose flour
2 tbsp vegetable oil
3 tbsp black bean sauce
1 tbsp Chinese hot sauce
4 eggs
0.25 cup chopped fresh coriander
2 chopped spring onions
Directions
- Preheat oven to 200°C. Arrange wonton wrappers on a sheet of baking paper on an oven tray. Coat with non-stick cooking spray. Bake until golden, about 7 minutes.
- Whisk milk with flour and oil until smooth. Place black bean sauce and Chinese hot sauce in two bowls; add 2 tsp water to each bowl; set aside.
- Set medium non-stick pan over high heat; coat well with cooking spray or oil. Pour a quarter of flour mixture into pan and spread into thin, even layer. Beat 1 egg in small bowl and pour over crêpe; spread into thin layer.
- Cook for 1 minute or until almost completely set. Carefully flip crêpe and brush with some black bean sauce and hot sauce. Scatter some coriander and spring onion over the crêpe.
- Slide crêpe onto flat surface and place 2 crisp wonton wrappers down the centre. Fold crepe over wonton wrappers to enclose and cut in half. Repeat with remaining ingredients.
